the decanting of red wine is very important and it can affect the taste
of a botttle of red wine by accelerating the breathing process in the
first 10 to 30 minutes after opening.there are two criteria to affect
red wine,although resources  from published literracy are limited.

Decanting red wine is long traditon. It may modify the taste or apprearance. Two criteria of making decision whether decant.
1) Young red wine is harsh and astringent, so decanting could soften the harshness and astringency.

No changes to tannins after decanting. Some red wine need to be consumed immediately.
2) Old red wine is not harsh but with sediment. Decanting could seperate the sediment. One should drink it up after decanting.
White wine, differen to red wine, has little tannin and is not aged so that it has little aroma and sediments.

Time 3: middle price wine’s taste may not change with decanting. Some older wine may be better when serve immediately. White wine, on the other hand, has less tannin than wine and will lose aroma when decanting. [1’33”] 288

Time 4: Growing competition from China and North American is threating the vintages in France. Also, climate issue that the condition in France may no longer suitable for vintages. However, there is an association that protect the origins of the wine may help support the business in France. Therefore, French winemakers may not be fearful of the competition. [2’05”]358

Time 5: Vintages in China are growing rapidly. Some pointed that climate condition may be a big issue for French winemaker. Because of global warming, China may become climate suited for vintage. However, Hannah thought that there are also market, human issue, and competition from corns and other vegetable growing. The research is not right about the growing of wine in China in 40 years. Yet, in the hilly place, the dramatic climate change enable vegetable diversity and people may choose to grow vintages. [1’53”] 346

This could help many east Asian who has malfunctional ALDH2 because gene mutation.  Benefit effect for angina patients—immune to nitro** effect. Lab?reality?
ALDH2 critical for eliminating toxic by-product in other organs ( Alzheimer’s disease)

red wine is usually strored in oxygen-free place because the fruite will react with oxygen.
the taste will be changed during 15-60 minutes.
wine has not the same materials, such as pigment and tanin. it is different from red wine.
