The passage mainly focuses on the rude and profit-oriented behaviors by waiter in the restaurant.
At the beginning, the author mentions some other rude behaviors by waiter, such as pouring dishes on the patron, to introduce his own experience happened several days ago.
Then, the author describes and delineates his distasteful and even offensive experience in a decent restaurant in details. In his words, it's easily and readily for readers to detect his anger and rage to the waiter's bad behavior that the waiter just appeared in the middle of the author's conversation from nowhere and refill the wine in every guest's glass without permission.
Moreover, the author carefully and closely discusses why this kind of behavior is so bad and terrible to customers and the incentives and causes of this behavior from two distinct respects: namely, the profit-chasing mindset of restaurant's owner and the dim picture of whole wine industry.
Finally, the author further analyzes why this kind of phenomenon is increasingly proliferating and gradually becomes widespread. By comparing the reaction of people in early days with that of modern people, the author points out that to some extent, it is customer who irritates and aggravates this situation.

Main idea: Annoying behaviour of the waiters in the restaurant-----why do they keep bothering us by filling our wine and touching our dishes?
Attitude: Negative(-)
Structure:
>>>Problem:
Years ago, there was a man who wrote down his complaint about the annoying waiters. And here we are, still facing that same problem. The waiters keep doing what they did.
>>>True experience: The author examplified with his experience, dinning in a fairly decent restaurant one day, to make a point that how annoying and rude the waiters can be by adding your wine without even asking and touching his meal.
>>>Another example of this rudeness: The restaurant always full the customers' glass with wine without asking, despite the fact that some people may not enjoy the wine and leave the glass nearly full when they finish the meal. It's hard to see wine go to waste. The wasted wine even helped some guy started up his own business----that you can see exactly how serious the waste can be. The waiters just never ask the customers' will sometimes.
>>>Why is that? Why do we put up with all this for such a long time? Maybe because the insecurity and ----- of things. 【原文:I think it must have something to do with the snobbery and insecurity that frequently accompany the wine business.】
Sometimes it's just the issue of consistency. We do it for so long and we forget to change the part that all seem to dislike.
>>>What to do about it: Maybe all it takes is a litttle bit of 【resistance】. An example from the history about dinner protocol---men stayed for talk and women needed to leave so men could speak freely. One day a woman chose to stay and no one told her to leave. Soon the words spred the town and then every women started to stay and chose to abandon the silly habit.
So the next time some waiter try to bother you, just politely and firmly tell him/her that you would rather not. Problem solved.
