I like cooking and I often spend quite some time cooking when I am free. However, unlike Mr.D, I do not always spend a huge amount of time on one dish to make it perfect when I am busy. Even though I am confident that I can make a good dish of mapo tofu myself if I spend more than an hour on it, I prefer to make it using the following "quick and dirty" way when I am busy, spending just about half of the normally required time. It is actually not the traditional kind of mapo tofu. I modify the traditional mapo tofu to blance the time and taste. The taste may not be as good as what I usually make spending about an hour, and it does not look as attractive either. However, the taste is still pretty good and the look of the dish is not that important to me when I am busy and need to finish the meal in a hurry. 材料: 1.佐料(盐,糖,生抽,老抽,料酒,生粉适量) 2.姜葱 (多少随意,但我个人来说比较喜欢姜葱的味道所以放多点) 
3. ground turkey 
ground turkey在美国比ground beef和ground pork都便宜,而且是白肉更加健康,85/15肥瘦刚好。味道不差我觉得用来做麻婆豆腐很好。 4. 豆腐 
其实做麻婆豆腐用嫩豆腐不合适,因为嫩豆腐很容易在炒时弄散。但我这里介绍的不是传统的麻婆豆腐,而是麻婆豆腐羹。在这里我追求的是味道和时间的最优化。做出來的外观其实一般,但我在之前已经说了我在忙的时候要尽快解决掉菜式的外观对我来说并不太重要。我之所以选择嫩豆腐因为它吃起来比较好吃,而且在做豆腐羹的时候可以很容易直接把豆腐弄散,不用像做传统麻婆豆腐那样花时间小心翼翼慢慢煎。 5. 调味包 
在这里我选择用的是现成的调味包。或许你会鄙视我,但我重申,我的目的是“在有限的时间内做出来味道不错”。我有充分的自信如果花时间用心去做我做出來的麻婆豆腐会比用调味包好很多。但这里我介绍的是"quick and dirty way",是给那些没有太多时间做或者不想花太多功夫做,又想做出来味道过得去的人的。 步骤: 1. 将ground turkey用调味料拌匀,腌大概15到20分钟。这段时间你可以用来做饭,切姜葱和其他事情。 
2. 时间差不多到了的时候下油,等油滚了放姜葱爆一下。 
3. 把ground turkey放进锅里炒熟。注意要尽快把肉泥用锅铲分开,不然等肉泥熟了就很难分开菜式就变成麻婆狮子头了。^^; 
4. 等肉差不多熟了就可以放豆腐了。放之前把豆腐在盒子里面先切一下。 
5. 把豆腐弄散炒热 
6. 加入调味包炒匀。(调味包不太辣的,喜欢吃辣的同学们请自行加入辣椒粉或者辣椒酱。稍微加点蚝油味道会更香) 
7.大功告成! 
做出来的外观没有传统的麻婆豆腐好看,但麻婆豆腐羹用来拌饭吃很合适而且味道不错。优点是做法简单和快的话大概可以在30分钟内做好。
