University of Florida is a good and potentially wise choice. It is widely claimed to be a more collegial, supportive program relative to Rochester. Undoutedly Rochester ranks higher to certain extent both in research and placements, but the gap becomes increasingly narrower.

Glad you received offers of admission, albeit belatedly. FIU and UTSA are really alike in various respects, but the former would be better.

While the two schools may not be your ideals, hope you will consider attending, or have decided to attend, one of them. Either can assure one placement at a teaching school. It's a good fortune to receive an offer this year under the adverse impact of the epidemic. Looking into the admissions cycle next year, competition is expected to intensify, as mentioned in some recent postings.
