就像黑脸题，yet后才是文中立场，前面那句是背景或废话。定义橄榄油质量就是以其酸性负相关衡量。
C是对的，就是用yet后立场顺推。而楼上认为错仅是因为还是以中国思维读题目·

个人倾向A，
1.The proportion of free oleic acid that an olive oil contains is an accurate measure of the oil’s acidity.
说明提炼后的油就只有free oleic acid

2.那么提炼前的呢？
yet extensive tests have shown that the less free oleic acid an unrefined olive oil contains per liter, the higher its quality。
没说会没有别的油
即，未提炼油的oleic acid 不等同于其酸性，还有其他酸。

3.C，因为还有其他酸，所以没法比较酸性和质量的相对关系

原文中这个an olive oil哪里告诉你是提炼后的油了？
原文的意思是：
虽然未提炼的橄榄油的质量实际上并不是用它的酸度来衡量，但是大量的测试表明未提炼的橄榄油含有的free oleic acid越少质量越好。并且橄榄油的酸度可以由其中free oleic acid的含量精确衡量。
什么叫精确衡量，说明两者是一一相关的，每个free oleic acid含量都对应着相应的酸度，不然怎么是 an accurate measure，同样也说明橄榄油的特定酸度就代表特定的free oleic acid浓度。所以C选项油的酸度在另外两者之间，那么free oleic acid浓度也在另外两者之间，free oleic acid和质量正相关，所以该油的质量也在两者之间。
而A选项文中根本没提精炼油free oleic acid的变化，无关选项
D选项因为free oleic acid和油的酸度一一相关，如果油中含有其他酸很难成立，但也仅仅是推想而已，文中并没有阐述所以也作为无关选项。

结论题，关键还是抓住原文

题目为

Acidity 不能体现未精炼的油的质量， but 大量实验证明当 free oleic acid在未精炼油中的含量越少，其质量越高。

free oleic acid 在油中的含量能精确衡量Acidity 的含量。

题目有矛盾既然 free oleic acid 在油中的含量能精确衡量Acidity 的含量。而 free oleic acid 可以体现出未精炼油的质量，为什么Acidity 不能体现未精炼的油的质量？

解释：A 选项When an olive oil is refined, the concentration of oleic acid in the oil is reduced.
因为油在精炼时，oleic acid 会减少，（所以Acidity 不能体现未精炼的油的质量）

但A选项漏了一点，当油在精炼时，oleic acid会增加，Acidity也不能体现未精炼的油的质量。

可能有增加或减少两种可能，所以不是best supported。

yet is a counter-premise indicator,which means,the latter of this sentence provides further info that is counter to the former.the latter of the sentence is the main premise of this argument.
so C is the correct answer.
