courant is definitely not nr1 math. depart. in US... where is MIT/Harvard/Princeton?
finance - NYU is definitely not one of the top schools... For IBD, you have Wharton/Columbia/Chicago on the graduate level, for quant/trading you have MIT/Stanford/Princeton/Chicago. Undergraduate wise we are talking HYPSMW.
the program is okay, worse placements than berkeley and cmu. (Stanford doesnt disclose their placements, but the brand name will get you anywhere) Check the students resumés, you will not be many students going for BB. Most of them went to MM shops doing quant works - not to mention becoming a trader.
The school is overall okay and It's a good program, if you don't have other choices and don't hate coding, take it.

first, trader is not "the most prestigious" job in finance. some traders and other people do think this way, but this is not received by everyone. for example you still are a 操盘手 in a chinese civilization. in terms of compensations, traders may be still behind portfolio managers. likewise, investment banks are not "the most prestigious" in this industry. they are "financial services" providers or sellers. in a similar context of retail world, it's commonly said "consumer is god" or "consumer is your boss" (anecdotally in Singapore when you shop, sellers always start greeting you "hi boss"). definitely a seller can't be a god or a boss on the street. as a matter of fact, many "MM shops" (in fact i don't know what this abbreviation stems from..) are far more attractive in terms of compensations and work/life balance than IBs. of course you can argue they are riskier than banks, since most of them are small firms, but all depends on your taste for risks vis-à-vis rewards.
second, courant is not reputed for pure math, but number 1 in applied math hands down, more precisely PDE stuffs. math (including applied math) have so many branches that no single institution can stand out in all fields. traditionally number theory is considered for the center of pure math, but still some european universities are more authoritative in some areas than the US top schools you've enumerated here.
