 先请教个问题吧，今天Reading -Quiz 5    错2个   页数（pdf文件的物理页数）：题121，答案572

"Underblanching
is like no blanching at all, and overblanching, while stopping the
enzyme action, will produce soggy, discolored vegetables."
It can be inferred that underblanched vegetables would
A spoil quickly
B taste like canned vegetables
C lack vitamins and minerals
D be soggy and discolored

I do not understand "underblanch"--- 我认为与"overblanching"对应，"underblanch"是漂得不够(is like no blanching at all)，所以选了烂得快

文中讲了１６０８和１６８２都被认为是早期的成功，以后才不行的。关键是这个"there were never"的理解，从来都不够吗？还是１６８２年以后没有足够，如果从来都不够，又如何解释早期的领先地位？
这个a large center of population 又如何理解？

大概的意思就是这样 翻得不好 能懂就行了

注意他前面都提到了despite these early sucesses

就说明它下面要说反的东东了

overblanching会产生soggy, discolored的蔬菜

而问题是问underblanched vegetable会怎样

那答案不是很obvious la

Oh, the key for 4 is C, not D. 从文中另外一处的来-- blanch 会丧失vitamins and minerals.
我觉得还是应该是A, 文章讲了BLANCH的重要性,然后讲方法,有强调了BLANCH过程中时间的控制--此处用了两个句子的并列,对比说明了underblanch & overblanch 的效果如何不好.(时间太短-- underblanch; 太长 -- overblanch 都不好)
我觉得还是关键要高清楚underblanch是不是blanch时间不够的意思.
