C 没有量化只定性 符合题意

A 其实也是可以推出来的-3- 不过没有C明显 题目没明说 就当是无关吧

题目中说The quality of unrefined olive oil is not actually defined in terms of acidity。这里的defined不是“决定”的意思，而是说“在评价未精炼的油的质量时候，没有做关于其酸性的规定”

整个题目我来翻一下：“在评价未精炼的油的质量时候，没有做关于其酸性的规定。但是大量测试显示每公升为精炼橄榄油所含的油酸越少，质量越高。而橄榄油中所含油酸的比例又可以准确无误地反映/测量橄榄油的酸性。”

也就是说：油酸——（反映）质量。
          油酸又与酸性相联系
          所以，酸性和质量也有关系
          正确答案应该含有oleic acid 和 quality两个词

define是指“定义”不涉及比较，但是原文其后补充了unrefined olive oil的free oleic acid越少，unrefined oliver oil的qualtiy越高，并且free oleic acid的比例是衡量oil酸度正确的标准。所以可以推出酸度越低，unrefined olive oil的quality是越高的。C正确。
define得出的（个人觉得应该)是指一个具体的数值或标准。比如说白酒的qualtity不能由酒精浓度来定义因为所采用的工艺和原料等都会影响的白酒的quality，如果我们要给这瓶白酒打分，可以是因为酒的工艺好原料好却因为酒精浓度不高，我们只给它75分。可是这只对是某一瓶白酒quality的评价，而我们通常都会说酒精浓度越高越纯的白酒，质量更好的，这才涉及到了不同的白酒间的简单比较。

个人感觉，C是绝对挑不出来错的答案，所有相关名词都是原文出现的，并且说法非常保险，既然酸度和质量好坏挂钩，酸度中间的质量一定在中间。
选答案要选出错概率最小的那个。

我觉得第一句话的意思理解可以为：品质不是由酸度来定义的，但是这里并没有否定酸度可以决定品质吖~~也就是说，可以理解为除酸度以外还有其他的一些因素共同构成品质的定义，但是酸度也会体现出品质
