Great that you have a dream my friend! Basically you are on the right track. Maybe I would say first prepare your GMAT because it is the harder test. Normally, I'd say you need about four months to prepare. And I HIGHLY highly highly recommend you doing one of the good GMAT courses (you can study by yourself first if you prefer). So figure out that you take your GMAT by September. This is ideal because if you don't get the grade you want, you can retake again one or two or even three more times. (although it's netter to just take the test when you are SURE you are ready). Then somewhere in the year take the TOEFL (before February if you can).
I do NOT recommend taking time off your job to do the application. Thousands and thousands of candidates from ALL over the word who are in VERY TOUGH jobs find the time to take these tests and prepare their applications while working, so there's no reason you should do different. Plus it really doesn't look good on your resume. Instead, start TODAY preparing for your GMAT. One hour a day. And two on weekends. And within four months, you will be amazed at how much progress you have made!
For the moment, don't worry about schools. First get the BEST test scores you can and THEN we can see where you can apply.
