HEC in France has two language tracks. One uses English-only, the other one use primarily French. I believe you have to take a French profiency test if you're interested in the French track. A friend of mine just graduated from HEC-France. She said if you're intertested in working in France, you should be on the track that uses French. And in general, Chinese students tend to be on the English track, unless he/she has previous French training. It's a hard language to learn! Don't know about HEC-Canada or INSEAD.
