I assumed that you are going to apply for PHD, otherwise your GMAT is exellent for MBA, which requires strong management expriences If you apply for TOP 20, one paper in top journal is more convincing than your GMAT and TOEFL. Normally, NYU require at least 740 in GMAT, and 730 is not bad. Tell you an example, one of my friends finished his master degree in HongKong(Bachelor degree in Nanjing university, and master degree-2 years focusing on research),and his GMAT is 740 and also he attended many academic conference and have publication. Finally, he attended a university ranked about 60th. It depends on. Anyway, try your best.
