I am sure if a school only does spot check, the first student they are going to check is the one from China. Many were caught because their old classmates sold them out and there were many cases that school does check with Universities in China. Berkeley called every single reference I put up in my application although I mentioned that some of them cannot speak english.
the aftermath of being caught is that you are totally banned from US education system. not just one school...
Is that the case? I know someone who were caught by one school, but accepted by another one(pretty good one), and she manages to get the visa to the states.
Do you think it's possible for the school to call the registrar in your undergraduate university and check the score of your courses one by one? I believe many registrars in China even can not speak English.
I have known two many students who have modified their transcripts, including those from top universities in China.
The grading system in China is diffrent from that in the States. It's very easy for a student to get A or A- in USA, but it's pretty hard in most top universities in China! It's crazy to imagine that so many Chinese students have received A in their undergraduate study!
As far as I know, many Chinese universities leave the query letters or calls from us schools aside. The registrar's offices get tired of helping check.

I think you can delete those courses related to Chinese politics. But you'd better not delete those math courses that top b-schools will pay attention to.
besides, the teachers at my univeristy told me that he often receive the request from foreign universities to check the transcripts. And the teachers will check the transcripts course by course to ensure that. Good luck, my friend! But I would rather tell you not to do that.
