OK... my two cents...
If you want to work in operations such as Front Office Manager, you defintely need work experience. You might have a better chance if you choose the functional units, such as database marketing or financial planning/analysis.
However, taking one step back, without work experience, you will have a bigger problem in the job market, holding a MS Hotel degree than an MBA with a Hotel concentration. Doing the MBA in hotel, you are better off because:
1. MS in Hotel prepares you better for a PhD in hospitality administration/research, so if you would never plan on going through a PhD program, MS really don't serve you very well, in my opiniion.
2. MS would be a terrible choice if one day you decide that you are tired of the hotel industry and want to make a switch to another, say FedEx/UPS, now, an MS Hotel will get you nowhere, whereas an MBA is an MBA (though with a hotel concentration), it would absolutely be perceived more valuable by the recruiters.
3. If you want to work in Finance or Marketing, an MBA definitely prepares you better than an MS. An MBA requires at least 48 credits where as an MS reqires no more than 36 credits. It's a HUGE difference. An MBA prepares you better for the analytical work in finance or marketing. NYU might be a different story since it has such specific concentrations as revenue management, but still it only requires 36 cr. For other hotel schools' 36-credit MS programs, I can definitely say that those curricullum don't prepare you well for the job market.
4. I have taken classes in both programs and I found that MS courses are easier to pass; MBA classes are definitely more rigorous, so that you learn more.
So depending on your career goal (this is very important, the premise), you might need to make different choices, but an MBA with a Hotel concentration will definitely open more doors for you.
There are quite some such MBA programs in the US, such as Washington State, Michigan State, Cornell MMH, and Georgia State. As for my alma matar UNLV, I asked a friend, for a CDer here, about UNLV Dual MBA/MS Hotel program (a total of 54 credits, which is not more than some of the MBA programs) and my friend has basically told me that it needs >600 GMAT to get an assistantship/full ride from the College of Business. This is not hard for most of you, I know. When you get into UNLV, which is in Las Vegas, it would be very easy for you to obtain internship or work experience, thanks to the great offerings of that city. Then you are good to go!!
Another factor to consider is "get close to job market". Cornell is not close but it's Cornell. That's why I recommend NYU to the first floor. New colossal hotels are opening every year on and off the world famous Las Vegas Strip and they are so state-of-the-art and luxury. This year was Wynn Resort, 2400? rooms. Huge. And many more are under construction, e.g. new hotel towers of the Venetian and the Bellagio. (Vibrant Las Vegas is in stark contrast to Atlantic City, which opened its first new hotel - Borgata, The first new casino hotel built in Atlantic City in 13 years!!! ) Will there be a spot for you when you graduate in Vegas? You bet!! Local school advantage.
