First of all, I don't recommend quitting in order to take your exams.
The problem is that you need to be employed when you apply, and quitting
to take the GMAT and TOEFL doesn't look so good because no one does it.
However if you need the time, and you can come up with an arrangement
with your employer to work part-time or take a few months off, that can
be a great option.
For your second question - for top universities you will need Top
scores! This is part of the reason which makes them top universities! So
for the GMAT, a 710 or more, and for the TOEFL a 108 or more.
