顶3楼的解释~  说一下我的理解：

1.Stephanie told me that [her son was sick] and [she would need an extra day to finish the project].
第一句是 S告诉我的两件事的内容平行：her son was sick 和 she would need ...
个人理解and 后面也可以加上that , 因为有没有这个and不影响句子理解。

2.[stephanie told me that her son was sick], and [she would need an extra day to finish the project]
第二句是 才是LZ认为的and后面的整句与主句平行，然而这么写是错的。因为逻辑上不make sense. S告诉我他儿子病了。S需要更多的时间完成项目。这两句话没有平行的必要，改变了句子原意。

还有个人认为 that... and that... 确实是优选，Manhattan上也说：“Only clauses starting with the same word should be made parallel.”

但我感觉and后面的that 如果不造成歧义的话也可以省，举个Manhattan上的例子：

e.g. Most employers agree that [How a candidate dresses for a job interview] and even [How he positions himself in his seat] leave a lasting impression.

这句话中是agree that的两个内容how .. and how..平行，但and后面没有加that...
但是你不能把how省了，那样就改变句意了。
