画线的就是说它能保持原色不变，那么厨师喜欢用这个也是这个原因，所以答案转了个湾，说得就是扔能保持black pepper的原色

看了斑竹的解释　还是不太理解

文章前面有一句 .....but white pepper is milder.I usually prefer it,it has a more settled flavor.

若不看这句　根据问题回归到原文也是在讲white pepper 怎么会说到 black pepper

都快考试了　感觉自己还那么菜　哎．．．
