首先，你犯了一个思想上的错误。GMAT的语法改错没有绝对正确的，只有在本题选项中最优的。所以选项离开题目就没有了意义。
你的想法是不对的。比较句型里有一条，如果比较双方相同的部分可以进行省略。但是不同的部分必须描述清楚。所以这里的corps可以省略。
crops on large farms在有的题目里是有可能对的，要看当时的情况。不过如果有选项补全了谓语动词的话，这个选项一定是优选对象。

这句话，我个人是这么理解的。可能只有我个人能理解

1、以上的黑体字部分可以去掉，不影响句子的语法结构完整性；2、黑体字部分，我理解为对crops的限定修饰，其中的the same as作为黑体字部分的先行代词，指代crops. 所以如果按这样的理解来看，是不可以去掉are planted 的。

还有例子：OG132. According to a study by the Carnegie Foundation for the Advancement of Teaching, companies in the United States are providing job training and general education for nearly eight million people, about as many as are enrolled in the nation’s four-year colleges and universities.

另外，如果去掉are planted 总觉得比较对象很怪。as 前面只有一个词，而as 后面则只有一个介宾；通常的比较应该是as 前有个定语或相当于定语修饰成分，as 后面则应该补出相应的代词+介宾。

原文可以转化为planting crops the same as
        (those) are planted on large farms. 比较主体是大农场和小农场，比较对象是crops。但在planting crops中，crops做宾语。在as后面，crops做主语（被动态）。在比较词两端，crops担当的句子成分不一样，所以are planted是必须补足的。
