the end of the eighteen centry 是主语吗？如果是的话，那saw 怎么能作谓语呢？

你理解的正确, the end of the eighteen century 是主语。saw是谓语。这个句子使用了拟人的修辞手法。字面理解是 "18世纪末期看到了......" 其实可以翻译成“18世纪末期出现了.....”

"whenever they were put on show" 这里的They 指代什么呢?

还有individual bulls and cows--------既然是individual, 后面的Bull 和 Cow 应该用单数才行啊.
