why"steamship" is incorrect?

Lactose,a sugar present in milk, is one of simple sugars used in food preparations for infants.
why"of simple" is incorrect? is it correct if i change it to "of the simplest"? what does "a sugar present" mean?

which one is correct?to him or him? in pp, two tests have this question,but the answers r not the same.i dunno why~~those questions above are chosed from pp, thanx gg&jj

1 要复数,steamships,可数名词不能单独用。
2  ...of,好象five of等序数词在前面的后面要加the表示特指。
3 用him吧，earn接双宾语吧。
