求问关于修饰的几道SC

各位大佬好，小渣最近在看曼哈顿准备SC，碰到有几个地方不太懂，特来请教。


第1题是同章节第5题。People that are well-informed know that Bordeaux is a French region whose most famous export is the wine which bears its name.答案是：Well-informed people know that Bordeaux is a French region whose most famous export is the wine that bears its name.我不太理解的是最后的画线句，答案说which bears its name: INCORRECT. The context of this sentence calls for an essential clause to modify the wine, since the point of the clause is to
identify the wine. If the sentence ended with the wine, it would be incomplete. The clause should therefore begin with that rather than which.到底啥时候用non-essential啥时候用essential？以及为啥句子在wine终结就不完整了？

第2题是第六题。People, who talk loudly on their cell phones in crowded trains, show little respect for other passengers. 答案：People who talk loudly on their cell phones in crowded trains show little respect for other passengers. 我想问的是这里的talk和show不需要第三人称单数吗？

判断是用that还是用which非常简单，看有没有逗号，有逗号都是non-essential的，都要用which，而没有逗号的都是essential，都要用that。
第二个问题，ppl可以是单数可以是复数，你看人家划线的部分只划进去了一个动词，那么另外一个动词就是给你做参考的，未划线部分用的是单数那就是单数，用的是复数那就是复数
