Students at Carver High School are encouraged to pursue only those extracurricular activities from which stems success in college applications.
Students at Carver High School are encouraged to pursue only those extracurricular activities from which success in college applications stems.

Both versions are correct!
The original sentence inverts the normal order of subject (success) and verb (stems = “originates”), but this inversion is possible after which or in similar positions.
There is no change in meaning.

1)Students at Carver High School are encouraged to pursue only those extracurricular activities.
2) Success in college applications stems from those activities.

Students at Carver High School are encouraged to pursue only those extracurricular activities from whichsuccess in college applications stems.
Students at Carver High School are encouraged to pursue only those extracurricular activities from which stems success in college applications.
