manhattan 上面一个不理解的地方

Manhattan 6th 第四章Modifiers 在最后的练习题中有一个是
     People that are well-informed know that Bordeaux is a French region whose most famous export is the wine which bears its name.
Manhattan 给的修正后的句子如下：
     Well-informed people know that Bordeaux is a French region whose most famous export is the wine that bears its name.
其他的解释我都知道，就是最后一个为什么要把wine后面的which改成that，实在不理解。
Manhattan的解释是：
      The context of this sentence calls for an essential clause to modify the wine, since the point of the clause is to identify the wine. If the sentence ended with the wine, it would be incomplete. The clause should therefore begin with that rather than which.
这个解释表示看不明白，求大神指教~~~~

the wine which bears its name 中的which使得modifier成为了nonessential的，所以对wine没有限定作用。句子可以理解为Bordeaux is a French region whose most famous export is the wine-波尔多这个法国地区是因为出口红酒而著名。但是，当你用that的时候,修饰语就变成限定性的了,句子的意思就变成了波尔多这个法国地区是因为出口以波尔多命名的红酒而著名。原文想表达的是第二种意思，所以要用that

太谢谢啦~~~后来看了5th的Manhattan，发现里面有专门讲Essential vs. Non-essential Noun Modifiers的小结，6th里面删掉了

没事~大家互相帮助 昨天这个我还去问了之前辅导课老师 老师说gmat里which都是可以当成非限定的
