第一句是 S告诉我的两件事的内容平行：her son was sick 和 she would need ...
个人理解and 后面也可以加上that , 因为有没有这个and不影响句子理解。

2.[stephanie told me that her son was sick], and [she would need an extra day to finish the project]
第二句是 才是LZ认为的and后面的整句与主句平行，然而这么写是错的。因为逻辑上不make sense. S告诉我他儿子病了。S需要更多的时间完成项目。这两句话没有平行的必要，改变了句子原意。

还有个人认为 that... and that... 确实是优选，Manhattan上也说：“Only clauses starting with the same word should be made parallel.”

但我感觉and后面的that 如果不造成歧义的话也可以省，举个Manhattan上的例子：

e.g. Most employers agree that [How a candidate dresses for a job interview] and even [How he positions himself in his seat] leave a lasting impression.

这句话中是agree that的两个内容how .. and how..平行，但and后面没有加that...
但是你不能把how省了，那样就改变句意了。

我觉得是:
S told me that。。。，and she would。。。。这个就是S told me that。。。和 she would。。。。的并列，不可以这么说的。作者是想说她告诉了我俩件事，这么说就成了告诉一件事和she would做什么并列了。
S told me that。。。。and she would  。。。不加逗号可以理解为that后面的宾语从句是俩件事的并列。she told me that：her son。。。and she would。。。这样就很明显了。

我觉得是:
S told me that。。。，and she would。。。。这个就是S told me that。。。和 she would。。。。的并列，不可以这么说的。作者是想说她告诉了我俩件事，这么说就成了告诉一件事和she would做什么并列了。

不一定啊，只要不产生歧义，用and就可以很明了的表达的东西为什么要用繁琐的从句呢？

因为我想着S told that A and that B, 这样比较平行。而S told that A and B （A、B是从句）感觉and后面的B是和主句平行。
但按你所说的，原句更简单，确实是这样，麻烦你再说点什么说服我吧！谢谢啦~
