Good question! I would suggest writing at least TWO. Because really of PRIMARY importance in all schools and in all essay questions is to follow the instructions! So if they ask for “stories” in plural, you need to give them stories. And if they ask for “AN experience” you need to give them only one. After all, in these essays, your main challenge is to follow whatever instructions they give and using these limitations, to show them that you are an AWESOME candidate. And it may seem hard at this point to get out TWO leadership stories in 500 words, but actually 500 words can be quite a lot. The important thing is to keep to the point.
A small tip for you: Leave out the introductions. START with the main PROBLEM or challenge. If you do this, you get STRAIGHT into the story from the very beginning. It helps you first of all, write a MUCH more exciting story, and secondly, helps you save a LOT of wordspace!
