Put down your basic information and a check-list of the documents in the package would help them file what you're sending and I'm sure they'll appreciate that.  I won't write anymore than that though.

That's tricky.  For your leadership positions, it's probably safer if you focus on what you did and the direct impact instead of the nature of the organization.  As for the panels that you organized, what about generalizing it and frame it as a discussion on strategic theories to improve Chinese economy, open up the market, etc.?
