同样的形式，that的指代不同，相对应的谓语的单复数也不同。

In "A of B that" pattern, that can refer to either A of B or B, depending on the logical meaning and context of the sentence.

In your fist sentence, the list can not has hand.-> illogical
In your second sentence, according to the single verb:includes, that refers to a group of hoofed mammals , and it also makes sense to do so.
