请教各位大神 Manhattan里提到的which是否修饰nonessential clause和that是否可以修饰people

Manhattan 6th edition, SC的 chapter 4 的problem set，5：People that are well-informed know that Bordeaux is a French region whose most famous export is the wine which bears its name.
解释里说，首先， that are well-informed...应该换成who. ----我的问题：that应该也能修饰人吧。。。

第二，the context of this sentenc calls for an essential clause to moidify the wine, if the sentence ended with the wine, it would be incomplete, So the clause should therefore begin with "That" rather than "Which" ----我的问题，这个解释是指当接的是essential clause时不能用which来连？但前面正文讲解语法里没有提到呀，而且 which接essential clause, 这种用法挺多的吧。。。

顺便再问个问题，manhattan里还提到，逗号+which, 是典型的non-essential modifer,然后举了两个例子
The cat, which lives next door, is very noisy.
The cat that lives next door is very noisy.

我的问题---是指如果要接non-essential modifer，不能用逗号+that?

除非是强调句，否则别把 that 放在你要修饰的“人”后面，切记！

然后补充一点，根据Ron他们的解释，GMAT一般不会针对essential或者non-essential这个点出题，不过根据经验，正规的用法只有用that 表示essential，用comma+which 表示non-essential。

最后，that 前会出现“逗号”的唯一情况是前方有插入语把that 跟修饰对象隔开了，否则不要用comma+that做定语从句。

还有你说到的第二点essential和non-essential，最近正在看OG的SC，里面看到了官方的解释：some writers follow the convention that "which" can only be used for nonrestrictive clauses, but insistance on this rule is controversial. 所以的确如你所说，GMAT不会针把这个有争议的点作为区分对错的关键。
