应该是定语从句吧

这里or render harmless是插入，与metabolize是同意的，不是并列关系，所以要加个逗号，相当与插入语，作解释说明。render harmless意思是使...无害

同意是定语从句。但是that are the organism's  attempt to metabolize, or render harmless, the chemical irritant.是省略句。补充完整后应该是：that are the organism's  attempt to metabolize （the chemical irritant）, or render（the chemical irritant） harmless.在语法书上有这种形式的省略，以前的老帖子也有提到过。
