这句话包含了拟人的意思：18世纪末见证了。。。，其实是表示emergence of prize-stock breeding在18世纪末出现了！

我的理解是，saw是这个句子的主谓语啊。。。

怎么会是倒装呢？
2楼还是3楼说的对，这是一种拟人手法，这里的saw有见证的意思

我查了上海译文出本社的新英汉词典
其中see的第9个意思是这么解释的：
目睹；经历；经受
eg.He has seen much unhappiness in his life.(经历)
The 5th century saw the end of the Roman Empire.(目睹，见证)
He seen a great deal(of life).他见多识广（阅历丰富）

可见，see的确有见证，目睹的意思

The end of the eighteenth century saw the emergence of prize-stock breeding, with individual bulls and cows receiving awards, fetching unprecedented prices, andexcited enormous interest whenever they were put on show.

回到原句，我看一下，我觉得，除了the end of 18 century能做主语外，The end of the eighteenth century saw the emergence of prize-stock breeding这一句子好像没有能做主语的了~不好意思，我只会解释到这种程度~语法也不太好==！
