Everyone spends copious amounts of time on this. A good approach would be to list the traits you need to show (leadership, entrepreneurship, creativity, etc) and think of a story for each of them.

Then for each essay, choose the relevant material/ story, think of a clear structure (outlining exactly what info to cover in each paragraph- a good way to do this is by writing the first sentence for each paragraph first, since that sentence should sum up the paragraph) and then go ahead and write. This makes things a more structured process, rather than a shot in the dark, hoping for inspiration.
