133. The following memorandum is from the business manager of Happy Pancake House restaurants.
"Butter has now been replaced by margarine in Happy Pancake House restaurants throughout the southwestern United States. Only about 2 percent of customers have complained, indicating that an average of 98 people out of 100 are happy with the change. Furthermore, many servers have reported that a number of customers who ask for butter do not complain when they are given margarine instead. Clearly, either these customers cannot distinguish butter from margarine or they use the term 'butter' to refer to either butter or margarine. Thus, to avoid the expense of purchasing butter and to increase profitability, the Happy Pancake House should extend this cost-saving change to its restaurants in the southeast and northeast as well."
Write a response in which you discuss what specific evidence is needed to evaluate the argument and explain how the evidence would weaken or strengthen the argument.
It may be true that replacing butter by margarine in HPC restaurants could decrease the expense and increase profit. But careful examination of the support evidence reveals the assertion from the manager is unconvinced. Hence, to fully evaluate this argument, a larger number of evidences should be discussed.
First, if the restaurant replaced butter by margarine, will customers complain this fact? The speaker demonstrates an average of 98 people out of 100 are happy with the change merely depending the fact that only about 2 percent of customers have complained. But we need more evidences to justify this assumption. Because not complaining is not equal to the happiness with the change, the accurate number of customers who are satisfied with the change may be less than the number that the speaker estimated. Perhaps, many customers who have not complained are disgusted with margarine. The reason why customers have not complained may be that they have a good temper and do not like to quarrel with other people. Unless a reliable and authentic survey is used to investigate how many customers are happy with the change, it could not strengthen the argument.
Second, we need more evidences to explain the authenticity of the server’s report. The reality of the server’s report is unconvinced. Servers need to work and deal with many customers so that they have no time to tell the customers that the butter is replaced by margarine. Likewise, perhaps the number of the servers who investigate the customers’ attitude about the replacing butter is too small so that the result of survey is not cogent. Thus, in order to reinforce the conclusion, the manger should let third-party take a reliable survey about the customer’s thinking about margarine.
Last but not least, the manger assumes replacing butter by margarine would decrease the expense and increase the profit in the southeast and the northeast restaurants. But the manger does not supply enough evidences to substantiate this assumption. It is entirely possible that the customers from the southeast and northeast have an exacting dietary requirement. They are bored with margarine and consider this margarine is not healthy. When they acknowledge the butter is replaced by butter, they not only complain this fact, but also not go to this restaurant again. If so, the profit will be decreasing seriously. Likewise, if the margarine is much expensive than butter in southeast and northeast, replacing butter from margarine is not beneficial to the restaurant’s profit.
In sum, this argument does not provide enough evidences to illustrate that replacing butter would not do harm to HPC restaurant. At the same time, this fact would not bring the profit to the HPC restaurant.
