请教曼哈顿上的一个关于which/that的改错题

原句：Of all the earthquakes in European history, the earthquake ，which destroyed Lisbon in 1755，is perhaps the most famous.

改后：Of all the earthquakes in European history, the earthquake that destroyed Lisbon in 1755 is perhaps the most famous.

我明白这里应该改成限制性定从使这个句子完整，不mysterious，为什么要把which变成that呢？是非限制定从引导词只能用which，限制性定从里的引导词只能用that吗~LZ不太懂，求朋友们的解答！（关于which/that的知识点真的越学越迷啊...）
