求助manhattan的sc题

Manhattan 6th e，chapter4 的problem set的一道题：People that are well-informed know that Bordeaux is a French region whose most famous export is the wine which bears its name.
官方解释which bears its name: INCORRECT. The context of this sentence calls for an essential clause to modify the wine, since the point of the clause is to identify the wine. If the sen- tence ended with the wine, it would be incomplete. The clause should therefore begin with that rather than which.

我的问题是虽然是essential clause，wine后面的修饰语不能去掉，但是为什么要把which 换成that,which就不可以指代wine吗？

Which只能引导非限定
例句为限定，所以只能用that而非which
