Don't worry about such minor case such as more words on essay, chinese siganature on the rec letters.  I have discussed with such essay format issues with a girl on CD several weeks ago.  For me, I applied 9 schools, write around 30 essays, 80% them are several hundred words more than required.  I also use many "single line" or "1.5 line" on these word documents.  I havn't received any negative feedback from schools about the format of my essays.

So pay more attention on the contents of essays, forget the format and words limitation. Let format serve for content, not vice verse.

By the way, I applied 9 schools and have got interview invitation from 4 of them till yesterday. I am quite confident that I will get at least another 3 out of 5.  Therefore, just trust me.
