不明白：
一开始就有一个动词saw，但是没有主语啊，主语难道是 eighteenth century？
或者saw做不同解释，不是“看见”，而是“出现”？

saw在这边是见证的意思。
也就是说18世纪末见证了emergence of prize-stock breeding

附上longman解释，see 第24条

24time/place [transitive] if a time or place has seen a particular event or situation, it happened or existed in that time or place:
This year has seen a big increase in road accidents.
The city has seen plenty of violence over the years.

on show. 应该用exciting来平行，而不是excited。这是我的理解，希望牛牛来解答。
