答案是D that指代的是animals

所以个人理解 that指代的是谁应该根据逻辑意思。第一道题 mammal包括的动物应该是很多，这里的include应该是特指even-toed ungulates 这a group of 哺乳动物，而不是指mammal 有哪一些。所以that 应该是修饰 a group of
第一道题只有动物能够exhibit preference，所以主语一定是animals 而不是 list

that一般是就近指代，但是楼主举的两个栗子都是A of B 结构，所以到底是指代A，还是B，看指代的内容，也就是楼主说的逻辑。
