Unless it is clear that this is not true, there is no reason to question the use of "those". On the other hand, "that" is very definitely inappropriate here, because there is no appropriate singular antecedent for "that" to refer to. If the movie in question in fact had only one set design and that needed to be conveyed, it would therefore be impossible to use a pronoun at all here and you would have to use "the set design" rather than "that" or "those"..
