Convergence: gap between the wine consumption in France and in US is narrowing, the gap between the heart disease in France and in US should be down too..

Lack of convergence: heart disease rate in France is still the same lower than in US.

E explained this phonomena, since those young French people dont drink wine too much (they contributed to the deline of wine consumption), yet they dont have heart disease (they didn't make the heart disease rate go higher in France). "heart disease typically does not manifest itself until middle age" means those potential heart dicease is not counted in the rate in France yet.
