She was a child prodigy, and Clara Schumann
developed into one of the greatest pianists of her time.
(A) She was a child prodigy, and
Clara Schumann
(B) A child prodigy, Clara Schumann
(C) Child prodigy that she was, Clara Schumann
(D) Clara Schumann has been a child
prodigy, and she(B)
(E) Being a child prodigy, Clara
Schumann
the answer is B which I got correct, but why C is not correct? Is it bc it's longer and not that precise?

It seems to me that Choice C is anything but the correct answer.
The construction of Chioce C tries to make "Child Prodigy" , an appositive, precede the subject Clara Schumann.
It has two key errors:
First, we need the indefinite article "an" to stand before the "Child Prodidy"; However, we can find no "an" in Choice C
Second,
"that" should be considered as a "relative pronoun" when it is used to
introduce an relative clause. Therefore, "that" should act as the
objects or the subject in the surbordinate clause rather than the
complement, as it is in Choice C.
If you want to use the structure such as "Child prodiy...she was", you should express as below:
"A Child Prodigy as she was, Clara Schumann..."
