答案是C,我想原句的意思是让which和that 成为修饰 coolness和mutability的定语从句的引导词,但是这样的话一个定语从句用that 修饰另一个用which修饰不就不对称了嘛?况且如果吧which后面的去掉,整个句子就不通了。

which(被GMAT按照游戏规则替换成that) some writers have thought inconsistent with their religious zeal, but which (很明显指代a cooleness of.. and an immutability of...) were in fact the necessary effects of it (指代 their religious zeal).
对于LZ提出的问题:
that和which的对称 - 我觉得可以一个看作限制性,一个是非限制性,作为补充,逻辑上也没有强调这两者一定是要平行对称的;
which后面去掉,句子不通? - 不知道LZ如何理解,这里只是多了一个but,但并不妨碍它就是一个非限制性定语从句呀。
