选项A 正确，这里不应该从语法角度寻找答案，而应该从修辞角度找
这里 it was said 并不是倒装强调句，而是插入语，这句话可以写成：
...so prevalent that, it was said, a squirrel could...
试比较：
...so prevalent that, as they said, a squirrel could...
插入语与句子主要成分的区别是，做插入语时强调的不是“这是传闻”，而是强调传闻的内容
而实际上，这种差别并不明显，所以 it was said 即使作插入语，一般也不用逗号分隔，但后面当然可以没有that ，而且这句话里显然没有that 比较好，但是如果你写作的时候不能确定，我建议还是加上that 好，这里加上that 也不能算错
不过我想 GMAT 里如果考修辞，实在有点“超纲”了，这道题本意应该不是考 it was said 用法
选项B 明显错误，其错误也不是在语法上，而是逻辑上，这种程度的语义问题，正是GMAT 的考点
试比较选项A ...a squirrel could... 这里 a squirrel 是泛指
而选项B ...a squirrel was said that it could... 已经变成了特指，表示据说真的有这么一只松鼠从纽约脚不沾地跳到乔治亚，显然不是作者想说的
至于其他选项，既然你都没贴上来，我想错误应该更明显
这道题即使搞不清A ，既然其他选项可以明显排出，当然只能选A，这种选项安排结构是GMAT 里相当常见的
say (that)
在网上搜了半天，绝大部分的语法观点都是不能省略，有一说是当that引导的主语从句比较短的时候可以省略that,
Longman Dictionary 用一个括号把that括起来，表示可以省略，给出的例句还是有that的,如下：
a) used to talk about something that people think is true
they say/people say/ it is said (that)
They say that she has been all over the world.
It is said that he was a spy during the war.
