First of all congratulations on your admits! That’s great!
So it’s very hard to evaluate what you should do without knowing
1. Your goals
2. Your profile in detail
It’s hard to say, but my guess is that M7 will likely be a stretch for you at your age, unless your work experience is really amazing. But I don’t really know, because I don’t know your GMAT or your achievements, or your leadership.
Business schools in Europe could also be an option, but then you have to start asking yourself: Where do you want to live? Where do you want to work? Do you prefer Canada? Do you prefer Europe? which is better for your target industry? (presumably IT) The same goes for the US (although you are right that age will make things harder).
Also, so you want to wait another year? Do you want to give up on your definite admit to take your chances? It could be great, but it could be risky too.
Fromt he Canadian schools, I’d say Rotman or Schulich are the higher ranked schools, but Ivey is also good.
