Maize contains the vitamin niacin, but not in a form the body can absorb.  ellagra is a disease that results from niacin deficiency.  When maize was introduced into southern Europe from the Americas in the eighteenth century, it quickly became a dietary staple, and many Europeans who came to subsist primarily on maize developed pellagra.  ellagra was virtually unknown at that time in the Americas, however, even among people who subsisted primarily on maize.

C说在美国,玉米的烹调方式使niacin变成nutritionally useful form.这可以理解为niacin能被身体吸收,所以就不缺niacin,与就不得P病,也就不会被发现。其他易排出

是不是说,因为美国的传统吃法可以防止那种病,所以他们都不知道有这种病.

--Situation:

1)M contains n, not in a form the body can absorb。

2)n Deficiency causes P.

3)M was introduced to Europe from US and then became the main food of European, making some European get P.

4)P was not known in US. at that time,even in people subsist on M.

--Reason: Someting makes US. people avoid n deficiency when they eat M, while European didnt encounter that thing.
